I always know I'm in trouble when my wife starts off a weekend conversation with "So what did you plan on doing today?" Sure sign that I need to think up some token chores (and think them up quick) in order to avoid her list. So usually I leave some open ends on every project I do around the house, and use them as outs for avoiding her list.
I've also made her realize that any "big" project requires advanced notice. If she tries to spring some large project on me, I respond that I'm lacking some critical material and will have to go to Home Depot, leaving her home to care for the three boys. That usually results in a "Oh, go on your way home from work and do it next weekend.""Stuie has the right idea" - Japher

Nice thing about my strategy is that it set the bar so low that I can just tiptoe across it to much acclaim. For example she got some birdcage and wanted it hung in the house. She was about to do it herself when I stepped in and said "let me do it." She was so thrilled that

Unfortunately both of our family's are full of DIY types, so I'm expected to keep pace.

There seems to be some confusion here - this is not about sharing housework. Mrs Horse and I have that pretty fairly carved up.
But one thing that lady of the house can't understand is that many men don't have a schedule for their day and regard doing nothing as relaxation.
This was brought out by a friend of mine at work who said it took her a long time to understand that when she asked her husband what he was thinking about and he said "nothing", he wasn't hiding his thoughts or feelings - he really was thinking about nothing
