One of the most useful and interesting books I have ever read was Archer Jones' "The Art of War in the Western World". It covers every innovation in warfare from the Ancient Greeks to Vietnam by recounting battles and campaigns. It not only serves as a history of innovation in warfare, but reading it will give you an excellent grounding in western military hsitory generally. The writing is good, and the campaigns and battles very well chosen to offer the most bang for the buck. Logistics and strategy are covered as well.
