The UN did not flaunt it's own resolution. I've already argued a million times that the wording of the last resolution did not imply impending miltiary action but would require a further resolution authorizing such (yes diplomatic wording is a bit "special").
The US at the time of the attack on Iraq had not legitimized such military action. Thus, saying that a new resolution legitimized it now is accepting that at the moment that attack was illegal and was only legalized afterwards.
The UN is not involved enough because of the way the UN is structured: i.e. the monopoly of the veto-wielding countries of the Security Council. If you want the UN to work, keep all countries as equal but that won't happen because the veto-powers won't allow that power to be taken away from them. Thus, unfortunately, the UN will never be truly independent until this happens. Ironically it is countries like the US which blast the UN for not having enough power, but it is the same countries which would never allow losing these privileges which have allowed them to reject countless worthy resolutions during the last decades.
It's not that some people just want to bash the US, it's that the US seemingly will not do what the world wants. To see that the #1 follower of liberty and democracy do as it pleases in the world stage is the utmost in hypocrecy. Liberty at home, iron fist everywhere else.
