What I did was:
- horsemen and knights need "Horses"
- cavalry needs "Horses "
You can do that with other resources/luxuries too like iron or wine. It is although a little heavy in management screen to have 2 kind of horses, 3 irons, 2 wines, ...

Hmm, no Oil in Scandinavia? Both Denmark and Norway have been pumping up oil from offshore platforms for decades and are self supplying in Oil (Norway even got very rich from exporting Oil).
1 Oil in entire North America doesn't seem very accurate to me either - Alaska should have have Oil also imho.
