I used to think huge maps w/ max # civs were necessary to provide the best challenge. Now I think that Standard maps against 8 civs is plenty challenging. The game moves much faster and that is most important. I like to randomize all other map settings to make things challenging.
Warm wet worlds for Mayans. They enslave an insane number of workers, can clear the jungle/marsh land faster than anyone else, build roads to the enemies for trade and conquer via these routes.
