Can anybody tell me what would be suitable to use as a generic modern-day Chinese fighter?

In terms of numbers, the most common Chinese fighter is still their version of the MiG-21 (the J-7 in Chinese service). These make up about half the PLAAF's active air regiments (the other half being the other fighter models as well as transports, etc)
If you want a more modern Chinese fighter, then you can choose between the J-8 Interceptor or the Su-27 (J-11 in Chinese service).
Janes World Air Forces gives the following in-service numbers for the three types of aircraft:
J-7 (all variants): 2000 aircraft
J-8 (all variants): 450 aircraft
SU-27: 85 aircraft (80 more on order)
SU-30: 45 aircraft (94(?) more on order)

BTW, there's a good open source article on the organisation of the PLAAF in the near-future available at: https://www.tdg.nu/resources/TOE/TO&...%2B/PLAAF2.htm (though I'm pretty sure that the author is wrong about J-6 numbers).
