You commented on the futility of holding off the buddhist barbarians as they attacked your jewish civilization one after the other. Sometimes it doesn't pay to be faithful, especially when EVERYONE is of the other faith. You are the heretic and unbeliever, so they will like your enemy and hate you.
When I see how a continent falls into two religious camps I look to see which one might yield useful allies (or disarm belligerent bullies). When I see a whole continent against me, if I'm lucky and they've spread their religion to one of my cities, I switch teams before all of them are at war with me, or at least to give me a chance at making peace with one of two of them. You still keep your old religion in cities and can convert back later if it's safe and could benefit from it (maybe you have the holy city or have many cities in the old faith). I'd wait until I'd fought to a dominant position or wooed an ally or two to my home brewed faith.
Other than that, having your own cats for a spoiler attack with a couple of cavs to flank their cats for damage when the shielding units are weakened is a great way weaken the stack of doom coming your way. This can be a problem if you set your choke point behind a square with covering terrain for them to approach safely. Then maybe a counterattack with reserves like you had is best.
