unhappiness occurs for any number of reason- crowding is one of them that is unavoidable as your cities grow in size. pop-rushing addresses this only by reducing the size of the city- eventually you'll want them to grow. in that case, you need to make sure you're generating more happy faces than angry ones. build temples, colosseums, cathedrals, and wonders to help with this. stationing military units in your cities can add to happiness. also make sure you are connected to, or trading for, luxury resources. they add happiness as well.
In addition to the good advice above, initially you can emphasize working city squares that give production or cash bonuses instead of those related to extra food. This slows growth and the related crowding issue. Once you get to calendar, open up those happiness resources, and let the city pops expand to those new limits.
