1) I had not yet seen this formula before. I think 11 axemen should do the trick, provided you beat his city defences down with catapults first. You don't need many for this - but the more you have the faster you can do it. At least 3 would be recommended.
That's already a pretty big invasion fleet. But the bright side is that you can use it to take that barb city - and the other french cities as well.
2) He doesn't really have time to upgrade his defences. You keep a ship next to Paris while building army, then declare war (ship will be automoved then) while your fleet is as close to paris as possible. You can land at the hills south of paris the very first turn of the war - and take the city over the next couple of turns.
3) I think the Colussus is more important right now.
4) I'd save him for Paris I think.
5) They will not touch, since they can't go more than 1 tile into the ocean, but you *will* be able to cross. So that's an important goal to achieve. You could consider building a theatre immidiately after you finish your lighthouse, and then build culture for a while. Or you could work all the coastal tiles for a few turns while you switch your slider to 80% culture - that delays your entire civ, but will expand Canterbury in 2-3 turns.
6) No. You want an invasion fleet for Paris anyway, so start building troops everywhere. As soon as you have enough troops, attack Olmec. If you manage to expand Canterybury before that, so much the better.
7) There's a few forests outside any city's fat cross that can be chopped without any penalties. Doing so wouldn't hurt. I usually do not chop forests within my cities' fat cross, but opinions on that differ.
