Assuming you have a widescreen monitor the option should be listed in the Graphics tab of the Options Screen. If not, you can change it manually in the .INI, but will probably need to run windowed mode if you don't have a widescreen monitor.
I haven't checked what resolutions that are supported, but in the options menu ingame, there's possible to change resolutions. I have a widescreen my selfv btw, but I have just played with the default resolution. That works fine actually.

Widescreen works great. I was very happy to see that I didn't even need to edit the ini file to get 1920x1200. I tried dual, but as mentioned, the split betwen the monitors was very annoying. I've been very happy with Civ4 so far, only the occasional choppiness that is solved by reloading the game.
Working from home is great, it let's you pretend you bought all this computer stuff for your business

Stole it from my wife... she purchased it for somewhere around the house, I saw it on the counter when I come home from work, and I swiper'd it. She was ticked!
