Several brand names have become so synonymous with the device in question that the device becomes known as the brand name, and thus becomes a noun rather than a proper noun.

True, though it's an enforced trademark. To sell a flask as a Thermos Flask you have to pay Thermos a lot of money.

Well, Thermos is in my dictionary, as is Coke (but the drink Coke isn't, just the coal and the cocaine ).

Maybe... It's just that I am sort of used to hearing this term applied to pretty much anything that will keep stuff inside it warm (well, not sleeping bags ), and I don't recall ever seeing the word capitalized so yeah... Assumed it was just a word.
