A question of form.......

The rules say that an update must occur after 2 guesses and before any more guesses.

Is there any reason why an update can't be done before the 2nd guess? or must I wait until someone else picks a letter before I update?

The word setter can update after 1 guess if he/she pleases, as it is unambiguously a disadvantage to do so.

The only time you are required to update after 1 guess is when there are 2 guesses remaining.
