It's standard Hangman practice. It's just to stop people having illegal four-letter (or whatever is one below your minimum number of letter allowed) words with an S on the end so that they qualify.

I struck out my S too! Admittedly it doesn't look very good because it's only one letter, but still - I did it.

But confronted with _ A _ E S, how many different variations of letters can you think of to fit? It would be far too easy for the unscrupulous player to change the word when so many things can fit. Not that I'm suggesting anyone here is unscrupulous, but it ought to be a level playing-field.
