The Altera Centauri collection has been brought up to date by Darsnan. It comprises every decent scenario he's been able to find anywhere on the web, going back over 20 years.

in most PBEM games with several players you have 24 hours, then you get a resend, then 24 more hours, then you are nexted (skipped). often longer if the moderator of the game (usually a non-playing person who watches turn flow) doesnt check turns that often.
in 2 player games there usually is no absolute limit for the time you have to send back the turn. but it is regarded as polite to send at least one per two days i would think. if you can afford it, send more often, even many turns per day, then it wont hurt if you are on vacation and cannot send turns.
some players however already get a little ... worried ... if you dont send a turn within 24 hours.

if you kill all human opponents, or if they concede, you win.
if you finish Alien Life Project in games that use it, you win.
3000 AD the game is over, sure.
other than that, it is often used the rule to count a game as a win if you have 4 times the power graph of your opponent(s) and possibly to hold it for 1 turn. as is used in the Challenge Ladder.

you select Email play in the menu. when you played your turn, you get a ".csg" file on your Desktop (or whereever) and you send that file to your opponent / the next player.
once you have launched CTP at least once on your (windows) system, windows realizes that you can open these files with a double click. which you do with the file you get back from your opponent / the previous player.

as the players choose.
some people go to war as soon as they meet their opponent. others coexist peacefully, build up ressources, infrastructure, ..., until one decides he is strong enough to take out his opponent, or wins by any other condition, or is attacked first...
in online games, often (sometimes ?) a 100 turn peace period is used.
