                Any starch really. I've had Scotch Bonnet and Habanero in sauces or stews without any deleterious effects.

                    Sloww, I am in full agreement with you on this one. A friend of mine's uncle pops piri piri (Bird's eye) peppers straight up. I tried one once - I'll stick to cayenne peppers straight up, but don't think I'd go hotter.
