You start with a fresh multigrain bread you cut yourself into about 1 inch slices (the thick toast helps to balance the cheese), smear on some unsalted room temperature butter on the outside, the cheese was shredded aged English farm house cheddar & a smear of swiss reclette (make sure both cheeses are at room temperature), cook on medium heat in an old fashioned cast iron frying pan. I never thought the Today show was worth anything but in this case they were spot on. ****in' A, I'm going to make another one because I'm a little piggy.

I had the best grilled cheese of my life maybe a year or two ago. I mixed equal parts butter, bread, cheese, and fire, and voila, I had an awesome grilled cheese.Click here if you're having trouble sleeping.

I've seen lots of food trucks including some offering grilled cheese but never one specializing in grilled cheese. Grilled cheese is like Mac 'N Cheese, sure, you can do it basic but if you do it right then it becomes something special. Simple things done right is how I like to cook though when I eat out I want something a bit fancier just so I know I can't make it at home.
