Erm, try again, Oerdin. McD fries are not reconstituted, that would be awful. They are peeled, cut, washed, and coated in dextrose to get that nice golden sheen, but definitely not mold-formed. A simple logic test confirms that: if they were, they wouldn't have the size variations they do. Think Pringles.
Quite a few restaurants double fry, but less than used to. One reason was that they have less control over the first fry by the supplier (other than McD, who I think is their own supplier). Wendy's switched to a single fry when they were trying to remove transfats and couldn't get the supplier to reliably change - so they change fries.

Hmm, it appears it was just a rumor that McD's used reconstituted potato starch. The rumor was so persistent that McD's actually took out an advertising campaign and had lawyers write dirty letters in an attempt to get certain people to stop spreading the rumor.
McDonald's said the advertisement was intended to explain to consumers that its fries were made from real, not reconstituted, potato and to focus on the product's simplicity.

It goes on to say McD's does coat them in a dextrose, milk solid and salt solution after which they're partially fried before freezing them. The fries are then fried a second time at the restaurant before giving them to customers. I normally like fresh better than frozen but McD's really is the gold standard in terms of crispiness for fast food fries.

In -n- Out is terrific fast food. Double-Double, no onions, add pickles and fries well done and a shake is my usual. It is absolutely consistently good no matter what In -n- Out you eat in.
I have never tried 5 Guys though.
That is one thing I can say In 'N Out has down which it seems Five Guys does not. The food is absolutely rock solid consistent, in a very good way, no matter which location you go to. They have it down to a science. Plus despite charging less INO treats its employees much better paying them more and even offering part time employees health insurance. That's almost unheard of in the fast food business.
I have now tried both 5 Guys and In 'N Out so I can comment.
In 'N Out - double-double animal style, fries and a drink. Price was fantastic, burger was consistent both times, hot, fresh and delicious, fries were a little above average. I call these fries "White Bread" fries since they were to perfect, no bad spots or skin. The Drink was a drink. My wife and I ate lunch for ~ $10.
5 Guys - 1st trip, had the regular cheeseburger, fries, and a drink. Wife had the little burger with a drink and shared my fries. Cost was ~$22 so really kind of high. Burger was very good, cooked medium (likely an undercooked one). I had them add too many items (lettuce, tomato, pickle, mayo, ketchup, mushrooms) it is kind of fell apart. Fries were very good, country style. Would have liked them a bit crunchier on the outside, some were still a little bit firm on the inside.
If I was going to lunch and found the two side by side, I'd go to In 'N Out, mainly based on cost. I would hit 5 guys only for variety.

Steak n Shake is quite good. The food is very different overall, though; their burgers and fries are much less... substantial? Not bad, just much thinner patties and fries.
They do have the notable advantage of actually having shakes, and quite excellent ones at that.

You can just get a double burger. I actually prefer it that way--easier to eat. And yes, their shakes are excellent. The biggest disadvantage to steak n shake for me is that the closest one in Virginia is in Fredericksburg, about 2 hours away. Not exactly worth that trip. But there is one at the waterfront in Pittsburgh, so I go there somewhat frequently while at school.
