The Welsh are very environmentally friendly. Sheep feed the hungry, are shorn to produce lovely woolen clothes, mow the lawns and are used for "entertainment" and cut heating bills by keeping Welshmen warm at night.
Dude, it's all about the relationship the animal has with humans. It's why we in the West are disgusted with the idea of eating dogs. Dogs and horses (and I guess, cats) are our companions, not our food.

Dogs and things are worse because they are carnivores, and diet wise it's not as good. Horses bred for eating are often different to horses bred for riding. And riding horses that reach the end of their lives, well we might as well eat them right?
We keep Rabbits as pets, and happily eat them.

Another reason why horse meat has a bad reputation is that meat tend to get tougher and lower in quality as an animal gets older; traditionally horses were more valuable for traction and tranportation so you wouldn't kill a horse and instead would use it until it died naturally. That meant most of the horse meat on the market was an old horse and the meat was likely full of knots, tough, and with that yellow fat (that's one way to tell if meat is from an old animal because the fat is yellow instead of white). With that sort of low quality meat it's no wonder people thought of horse meat as only good for dog food or pig food.
People are obsessed with tenderness, which you can get rid of by longer cooking techniques. The prime quickly cooked cuts cost more but the cheaper cuts taste much nicer, you just have to cook them differently. Suckers wasting money on prime cuts.
Like why is fillet steak the most expensive? It's the tenderest, but it's the most tasteless.
