Amazingly enough, the roads didn't get levelled, because they were already level.
We did trash a few mazes and warrens when the Victorians ploughed some new roads through a few slums and rookeries, but the fact is, the Luftwaffe didn't do as much *concentrated damage* as 1666, when despite Wren's subsequent insane and irresponsible ideas to go all rational everywhere, people dug their heels in and most of the old medieval street layouts prevailed.
So thankfully we don't have some dull, soul-less grid like Paris or Madrid. Or those ghastly lego-blocks you have over there in the New World.

They are rather ghastly grids but they make it so easy to find your way around in a city even if you're unfamiliar with it. Oh, well.
