I imagine it is the pine nuts (its labor intensive to gather them) and some people demand only specific specialty olive oils which can cost an arm and a leg. High end olive oils can be some very expensive stuff.

Easy Pesto recipe:

Mix the following in a blender:

1.5 cups low-fat chicken broth
1.5 cups parm
1 cup fresh basil leaves
~4 tablespoons olive oil
~4 cloves garlic (depending on the size of the cloves and how much you like garlic)

I tend to add chopped up grape or cherry tomatoes. You could add sundried tomatoes if you prefer. Pine nuts optional (I don't bother, actually).

That makes enough for a lb of pasta w/chicken.

The freshness of the basil is key. Makes a huge difference.

Easy enough to grow your own that way it is always fresh and you can even grow the specific subtype of basil you want. Even if you live in a snowy and cold place it's easy enough to plant a few herbs in a pot you've placed by the window.
