Why is it that both categories are so hard to come by in the entertainment industry? Certainly at least the latter are ubiquitous in real life; any visit to the nearest whole foods store will prove that.

The entertainment industry does not thrive on "relatively unknown" people, so half your question is automatically answered. As to the second part, who would watch a show or go to a movie to see plain and/or ugly people in the popular roles. Thus all the different, non-evil communities (including heterosexuals) are much better looking than any corresponding groups in real life. (Nerds are an exception to this mostly.)
