  • Grandpa Troll's Latest Wingsfest!

As many here know, I love cooking and love Hot Wings!

I was watching Paula Dean on Food Network and had never cooked Hot Wings this way, so gave it a shot!

    Wow, simply awesome!

I would be remiss to not thank Mrs. Troll, because I can only use one hand she did much of prep labor and hrelped guide me through with advice, so my heartfelt thanks out to my closest and best buddy, my Sweetpea!

Here are a few highlights to share and hope you enjoy

I purchased a large tray of wings, cut the tips off, split the wing in two.

Took a bowl, about 8 inches deep, maybe 16 inches across at op, marinated for 14 hours with Franks Red Hot Cayenne Hot Sauce, probably 45 ounces would be a fair assessment and simply cover and stored in refrigerator

    Preheat oil to 375 degrees

Drain excess marinated sauce off wings and once oil is ready, I place half the wings into the pan.

I probaby used 64 ounces in this pan of oil.

I cooked the first batch of Wings 11 minutes then removed and let excess oil drain onto paper towel

Store in refrigerator? Store in stomach.

        Mmmmmm, wings.

I an unorthodox in that I bake my wings (NO!!, C'est vrai! It's a bit healthier) and then toss them with Frank Red Hot Wing Sauce (Frank Red Hot is great for wings). They come out super delicious.

Sometimes I coat the wings with spice blend before baking them and then toss in Wing Sauce... perfect.

Now, I wanted to experiment, the wings without any additional sauce were nice, little bite, nothing overpowering.

I used Paula Deans advice, a stick of butter (whic is 8 tables spoons melted down, not quite to liquid state but more melted than room temperature butter, use a wisk and add 8 ounces of favorite, mix to blend

Here is one mix, same producer as marinate, Franks Buffalo Sauce

I usually use John Boy and Billy Hot Sauce to top as a condiment, then came across this, Sweet and Mild, ~meh~ nice taste but not a so called Buffalo Sauce.

If I could offer a bit of advice from a novice cook, experiment to what your tastes are

I have a desire to cook and make mistakes along the way, but make notes and learn

              Hope you enjoy!

Add some of this next time if you want it really hot

The best thing about Louisiana is their hot sauce.

                        For a light bite

                        One of heavier hits

...and another heavy hitter pure cap

The actual pepper of choice Habenero

                          Pure Cap
Great way to spice up anything without changing the taste
