    Same way you do milk.

    You bring it up to a temperature just high enough to kill salmonella, this temperature still being low enough to not denature the protiens in eggs.

          Cookies are good... though I generally hold that cookie dough > cookies. Maybe it's because I'm a bit particular with my cookies; they're best when they're fresh out of the oven, still gooey and warm. But if they're burnt, it's game over. With the straight cookie dough, no worries about burning them - you know what you're getting. As an added bonus, there's the aspect of instant gratification: just open the fridge and eat, no prep time.

          Not really worried about the salmonella, as I've been eating cookie dough and brownie batter for 19 years without a hitch. I've only known one person to get the salmonella - my brother - and that was from one of those shrimp cocktail party trays. Besides, I just checked a package of cookie dough after reading this thread, and it had no warning about containing potentially dangerous raw egg product. So if I do get sick, I might get away with one of those frivolous lawsuit things I keep reading about.

                People can get salmonella from eating cookie dough?

                  It's probably the raw eggs part that gives rise to a salmonella risk. But a lot of recipes these days don't use that anymore.

                    Thoertically, under certain conditions (using uncooked unpastuerized eggs) but it's pretty low and if you use pastuerized eggs there's no significant risk.
