I went to a Indian-American friend's wedding last weekend and his mom gave Soan Papdi to everyone as a parting gift post wedding/dinner/party. It's really good but I've never had any cookie like this before; it's almost long and fibrous. How do they make this stuff? I mean the ingredients, other then a few items like cucumber seeds & cardamom, all sound run of the mill (butter, sugar, flour, almonds, pistachios) yet the finished product is totally different from short bread which uses almost the same basic ingredients.

They run the ingredients through a goat's stomach first.
