That wiki article really isn't well done. Wolfgang puck is the only one who does things like that. California Pizza Kitchen is a better example. Generally the pizzas are smaller but the ingredients are far better. It's pizza turned gourmet or haute cuisine; regular pizza is served with beer while California pizza is high end and best served with a fine wine. Also most of the time California pizza is cooked in a brick wood fired stove instead of the gas or electric things the other styles use.

Also California Pizza's crust is thin but it isn't floppy like a New York slice. the crust is crisper so that you can eat it without making a mess or having to resort to folding it to prevent everything falling off. Much better.

Damn straight. NY style is the only pizza. Thin crust with lots of grease coming off the cheese and pepperoni. Board walk style Beach pizza.

Those are three very well know chains doing the California style pizza. CPK is out of Holleywood, Sammy's is from San Diego, and Extreme is from San Francisco.

I grew up in NYC, and people used to always talk about getting a pizza pie. (It wasnt deep dish, of course, just referring to the language used)

btw its possible to get California style (Wood oven, funky ingredient combos, etc) on the east coast without going near a CPK. Still indie joints doing that. I first encountered that kind of pizza in Baltimore, at an indy joint in Fells Point, before Id ever heard of CPK.

One of my favorite pizza's at Sammy's Wood Fired Pizza is the Goat Cheese Pizza which has sauteed wild mushrooms (locally harvested of course), roast garlic, fresh spinach, sliced red onion, and French goat cheese. The sauce is what makes the pizza great though as does the California mazzarella cheese. Fresh local cheese just tastes better then the factory stuff which has been sitting around for weeks and shipped hundreds of miles.

California Pizza = pizza for people who want excellent flavors over just lots of average tasting food. Quality >> Quantity.

The wild mushrooms really do taste better as the factory farmed mushrooms just don't have any taste at all. They send the pizza over the top.

Back in the day, there were lots of Italian girls from Bensonhurst who'd have beaten up anyone who suggested that eating a slice or two made them a "man".

Fine whatever floats your boat, just don't sully the good name of pizza by calling that estrogen laden creation a pizza.

Eating pie makes them a man or lesbian as the case may be.

Not only is it pizza but it is far better then that run of the mill grease fest you claim pizza has to be. California pizza = pizza perfected.

Primatives who don't know about good food. You're so used to eating crap you won't accept real food. Oggie deserves his frozen processed junkfood.
