You've interpreted that differently to me and Drogue - could go either way mind you
And bear in mind that a significant proportion of American cuisine derives from the British cuisine - your big roast dinners are exactly like ours with a few minor deviations.

SPAIN: jamón de bellota, jamón jabugo, jamón ibérico, chorizo, caña de lomo, morcilla de burgos, morcilla achorizada, fuet...
France is best with cheese. Austria has the best bread. Italy is Italy - I can't live without pasta; plus, they have the best truffles.
So a combination of those would do IMHO.

SPAIN: jamón de bellota, jamón jabugo, jamón ibérico,
Wrong! They all are the same. Scientific explanation:
-Jamón ibérico: is in general the ham made of pigs of the iberic race. There are ham made with normal white pigs. It is called Jamón serrano and it is of much minor quality.
-Jamón de bellota: is ham made of iberic pigs fed with acorns only. There are also jamón de cebo (fed with normal feed) and recebo (feed with acorns only in the last months of the life of the pig). The jamón de bellota, is the best of course.
-Jamón de Jabugo: refers to the place where the ham was made, Jabugo specifically, a town in the province of Huelva , there are iberic hams from many other places in Spain too but are less famous.
So you are referring to Jamón Ibérico de bellota made in Jabugo (the best and most expensive btw).
