There are literally thousands of different species of oysters and they have very different tastes. Some are buttery, some sweet, some salty. The conditions of the water and the freshness of the oysters also are major factors.

Go to a good oyster bar in a city which has a good local fishing industry to get top notch fresh oysters.

One thing I have never really understood is why people put oysters on steak and kidney pie.

/me awaits the obvious joke about why kidneys in a steak pie....

              Eww.

Oysters are meant to be eaten raw - right out of the shell. Tip the shell up to your lips and slurp. Yum.

This pie [steak and kidney] is a staple of English cooking and the recipe remains much the same whether you are reading Mrs Beeton or Delia Smith. The biggest change is that where we now use mushrooms to give the dish extra flavour, originally oysters would have been added. Oysters were the food of the common people, cheap and easy to obtain. Some things have changed about English cuisine!

I like steak pie, but not kidney, nor would I appreciate oysters in it either...
