Jet engines produce a lot of particulates when running, including soot and powdered aluminum (the latter from engine wear).

Contrail formation is entirely dependent on the humidity of the local air at that altitude. This is important, because humidity can vary greatly between air layers over the same location.

Contrails form when water vapor starts sticking to the particulates produced by jet engines; this is no different from normal cloud formation, except that in this case the particulates are concentrated along a line -- at least until winds disperse them.

Because jet engines themselves produce some water as an exhaust product, there is almost always a contrail. In very dry air, it will be very short in length and very short lived, as the water vapor from the engine will quickly spread out into the surrounding air. If the air is very humid, contrails will be long lived, and will spread out into clouds as winds disperse the particles.

Meteorologists have been using contrails for decades to estimate humidity at different altitudes.
