5 Slices Bacon (chopped)
2 Cloves Garlic (minced)
1 Med. Yellow Onion (diced)
2 bay leaves
2 all spice berries
1 Tablespoon Thyme
3 Small Potatoes (diced)
3/4 Cup water
8 oz. clam juice
2 cups heavy cream
10 saltines (crushed)
2 cans chopped clams (drianed, reserve juice from one can)
4 celery stalks (chopped)
1 Tablespoon dried parsley
3 stalks scallions (chopped)
2 teaspoons white pepper
1 Tablespoon arrowroot
Fry bacon in large stock pot until fat is rendered
add onion and garlic, cook until onion is soft
add bay leaves, all spice, thyme, potatoes, water and clam juice. simmer 5-minutes
add cream, saltines and clams, simmer 5-minutes
add arrowroot to reserved clam juice (from can) and temper with juice from pot. Add to soup along with celery, parley, scallions, and white pepper. Simmer at least 5-minutes or until potatoes are soft.
Remove bay leaf and all spice. Salt and Pepper to taste.
Serves about 4.

I've worked on that for about 2 years. Making the chowder about 3-4 times each year. This finally got my wives approval, and she is very picky about her chowder.
