Leanness isn't the most important. What you want is a peice of meat with lots of collegin, because it melts at low temperatures and gives the mouth feel of moistness and fat, without the calories. I find, however, that pork stands up to longer periods of heat better than beef. My favorite crockpot food is to take a Boston Butt (i,e., pork shoulder--NOT a picnic shoulder) and give it a good rub and let it sit overnite in the fridge. In the morning, pop it in the crock and go. At night, you come home to pulled pork. Put it on a bun with some BBQ sauce and cole slaw and you have a Carolina pulled pork sandwich.

Well, you put the fat on top, so it can drip into the meat, but then afterwards, discard the rest of the fat... I mean some of us do want to enjoy our food AND live past 50.
