There aren't any glitches in the videos. The guys who made them literally drove the same track over and over (1000 time per video), then composited the whole lot into one single playback. The cars hanging in the air at the end were actually supposed to be in the water, but since they had already crossed the finish line, and they had hit the edge of the map, the game didn't care about them (I think it freeze frames when you complete a race).
