But I stopped really fast when it got to that point. I killed the engine and pulled over in under half a minute. didn't restart the car until I'd refilled with coolant (plus a break of ~1/2 hour)
Car seemed to run fine for the thirty seconds I had it going as I parked it at the garage. No knocking, no funny noises. Don't know if you would be able to tell blown head gasket from that sort of thing.

If it didnt get past 3/4 you may be OK. My wife fried our Acura Legend and it still ran OK when it had cooled down despite that she had melted everything that could melt. The 'funny' part is that she nearly did it a second time in the matter of a few months.
What kills me about this bull**** is that with all the godamn bells and whistles on these cars, it cost me $2000 for the lack of a 50 cent warning sound when the engine gets too hot. How many people drive aroound constantly looking at their temp gauge - and it can go from OK to ****ed real fast.
Yeah. The only reason I was able to stop that quickly is that I knew there was a coolant problem, so I was driving with one eye on the thermostat, and deliberately took city streets instead of the highway (plus I was driving with the accelerator barely depressed).
If my car overheated normally, I wouldn't notice until something sounded wrong or I lost compression (which, of course, would be really bad)

I had a similar problem over last Xmas. I tried sealant and not only did it not help but my water pump blew damaging the engine (now have new car). I would not recommend trying sealant, it only covers up problems that should be fixed and could make things worse.
