Well, I spent a couple minutes today doing a systemwide change of icons (CandyBar is great, Ag), as well as my dock.
For the desktop, I just went back to one of the wallpapers that shifts with OS X.

That Escher picture is actually a lot less trite than some of the others he's done. To a good approximation, it's a conformal mapping (which means that it preserves angles, like the Mercator projection of the globe) of a picture of a guy looking out at the Mediterranean, with distances increasing as you move clockwise (left on the base, up on the left side, etc.).
