King's Arms Tavern Colonial Game Pie

      1 duck
      2 pouinds rabbit
      2 1/2 pounds venison
      1/2 cup vegetable oil
      2 cups port
1 1/2 quarts basic brown sauce
      1 Tbsp Worchestershire
      1 clove garlic
      1/2 tsp pepper
      1 cup currant jelly
      1 1/2 pounds mushrooms, quartered
      1/2 cup butter
1 pound slab bacon, cut into 1/4 inch cubes
      1 can (15 1/2 oz) pearl onions
      pastry crust
      1 egg
      2 tbsp milk
      salt to taste

      Preheat oven to 400F
Salt the cavity of the duck and place it breast up on a rack in a shallow roating pan
bake for 30 minutes at 400F, reduce to 325F and bake until done.
Simmer the rabbit in a small amount of water for 60 minutes or until tender.
Cut the venison into large cubes and saute in the vegetable oil in a large skillet until well browned, stirring and turning as necessary.
      Remove venison and drain skiller.
Add port to the skillet and boil 2-3 minutes, scraping up any brown particles.
Return the venison to the skillet and add brown sauce.
Simmer for 60 minutes, or until the venison is tender.
Cut and debone the duck and rabbit into medium sized pieces, and place into the skillet with the venison to keep warm.
Season with Worchestershire, garlic, pepper, and jelly.
Saute the mushrooms in the butter until lightlyh browned.
Fry the bacon until crisp; drain.
Divide the mixture into individual greased casserole dishes, and top with mushrooms, bacon, and onions.
Cover with pastry crust, trim the edges, and ***** the tops to vent.
Lightly beat the egg with the milk and brush the pastry with the mixture.
Bake at 350F for 20-25 minutes, or until the crust is golden brown.
      Serve piping hot.

The only alterations we made to the above recipe was to quadruple the portions and make huge pies with the filling, which we would freeze to enjoy throughout the year.

We would serve the pie with red currant jelly. Absolutely fantastic.

Midwestern deer are not safe to eat. Mostly they are, but you never know when you're going to get the one with "mad deer disease."

          "mad deer disease."

They get this from eating their own kind?

Just checked with my Dad, who hunts deer in Kansas and Missouri and has looked into it, and he says it's unsubstantiated.

It's so unsubstantiated that the states of Illinois, Wisconsin, and Minnesota have an advisory against eating deer.

Had a pigeon fly into the front wheel of my bicycle, was looking right at it when it got its wing in my spokes. It managed to hobble away afterwards though.

Had a crazy squirrel run face first into my back tyre.....heard the 'bzzt' sound of something rubbing against my tyre, then saw the squirrel run off.

I see some fat dead foxes sometimes, wonder how much of a dent they made when they got hit
