A light mozzarella salad is perfect with that too... I use low fat moz, lettuce, large sliced tomatos, basil and some seasoning with EV olive oil and balsanic / red wine vinegar .

I use Spanish , Italian is more often than not Greek; Italy exports more than it produces, most of what it exports is actually imported from Greece. To get real Italian (which is on a par with Spanish, you have to go to Italy itself, they save the good stuff for the domestic market. Greek OO is good, but it gets better.

Yep, most of the brands at the stores we find are made from Moroccan, Greek, and Spanish olives.
