I admit I would have chosen English if you hadn't, and mainly didn't make another choice because I'm not sure of which civs are available in the MedMod, but I don't mind in the least. I would have minded more back when I joined PBEM, but I'm used to playing assorted nations like Indians and Hebrews now.
For the settings - what you suggest is fine. Having AI makes the game management marginally tougher though, because of the way the AI files for MedMod overwrite the defaults (or vice versa) so you can't have your game set up to handle both simultaneously. Of course, this only matters for the player(s) who plays just before an AI player (so that the AI makes it's decisions on their computer).
