Checked the in-game log. Both Hinduism and Buddhism have been founded in distant lands.

nobody starts with Mysticism. So they have to either research it or pop it.

Alternate route for next turn is to move to the hill. But with Forest/jungle surrounding, I am not sure if we will see more tiles looking down from the hill top.

We'd see more tiles, but I don't think we'd see any new ones if that's what you mean.

IIRC jungles are actually better defense than hills, right? (Crazy CIV mechanics, I'm still getting used to them...) If so I'd be inclined to stick with the jungle tile.

Yes, Jungle and forest are the best defenses, hills are equivalent if you are an archer-type unit, though.
