You never mentioned artillery. They can be quite useful reducing HP's of close navy units.
Too bad this is unpatched game. Sounds like a real can of worms. Go to civ fanantics and read Crackers notes on the early game. Your mine to irrigation should start at about 3:1 ratio, or higher.
With knights I would have waited for cav or be the smaller spoiler civ while some stronger civ is cutting up target civ. If not waiting for cavs, then you need at bombardment before throw knights into the fray. If you had more mines you could have afforded a bunch.
