The one thing I still don't understand about resources is how many you need. That is, say you have one ivory. How many cities does it give a bonus to? Same goes for strategic goods. Is there a limit on how many units you can build if you have access to, say, one deposit?

if you have one resource, it benefits all cities that are connected in some way to the resource, whether it be strategic, or luxery. if you have. any that you get after the first one can be traded. you cannot trade resources that you get from someone else.-connorkimbro

Only strategic resources can run out, and the elimination rates vary per resource. Iron runs out rather quickly, while horses never expire.
Strategic resources are linked to the number of players. There are 2 horses per civ, for example.
When a strategic resource runs out, it ALWAYS is replanted somewhere else.
