...and go back to it later when all the players are back on-line? I'm specifically talking about normal turn-based mode, and obviously it would only apply to games that had been privately arranged, but is it possible?

yes you can. save the game as normal. when you restart the game you must ofcourse host it. load the game in and then have your players join you game in the same order they were in before. the loading may take a miniute or 2 depending on the connections. but it will continue right where you left off.
also if you have autosave turned on you can contiune in the same way if the game gets out of sync or just crashes.
