I'm interested but how many turns per day are we looking at? Are you planning on playing it like the folks at Civfanatic's PBEM forum, where everyone is online at the same time and they play for a couple hours? Or is it more traditional like 2 or 3 turns a day, anytime you get around to it?

Most folks play PBEM instead of on a central server because they don't have the luxury to play in huge blocks of time. For some their fifteen minutes of play-time is a treasure. Over in CTP PBEM, we use the "24 hour" rule: turn must be played within 24 hours or the player is 'nexted', i.e. he loses his turn. Two or three turns a day. I must suppress a chuckle.
