Unfortunately these days it's more of the bad dirty look variety than the inviting dirty look - she has just entered into her 9th month of pregnancy and can't understand why I'd rather play civ than constantly rub her feet!
However this game sounds very interesting. I'm in!
I've never played a scenario before. I tried one of the Conquests briefly and then decided I liked the stock game better.
What would the victory conditions be?
Do the civs have the same attributes as the stock game?
Are all the units and tech tree completely different?
Are there still 4 eras?
Do you start with lots of units?
Are all the civs reasonably balanced? (land, units, etc)
Are there UUs? If not then are GAs only triggered by wonders?
Does the civ pedia have all the info on wonders and units etc?
Spain looks interesting (commercial religious if I recall?)
but so do the Ottomans. What attributes does Prussia have? What choice would make for a better game for us overall?

So many questions..
Hmmm... let me start with the answers I know. Paddy, myself and several others played this Conquests scenario a while back -- it was a lot of fun.
Victory conditions to be set by Paddy when he mods the game, but I believe its by conquest and/or domination only. Not wonders/un/cultural (i think). Paddy can verify this when he sets up the game.
The tech tree is a bit different with some more era specific advances (Code Civil for example, which increases worker efficiency) and the game stays in one era only.
You do start with a moderate army and the civs are mostly balanced. I think the consensus is that France is a bit stronger than the others, but at the beginning, it's pretty equal. The reason for the disparity is the civ specific units are slightly different in this scenario. The size of the civs vary a bit also.
GA is initiated by UU in sucessful combat. NO major wonders, just minor wonders (like battlefield medicine).
I think Prussia is Industrious and Militaristic. And Austria is the same.
You actually get an opportunity to smartly pick a civ, as you know the location and civ abilities of the three human players.
Ottoman puts you in direct contact with Russia (mickeyj) only.
Spain puts you in direct contact with France (paddy) only.
Prussia and Austria puts you inbetween both France and Russia.
Prussia and Austria have decent militaries. I played Austria in the previous Napoleon PBEM. I like the Hussar UU.
It might be worth it for you to start a "hot seat" PBEM based on this scenario and play a few turns playing each of the different civs. If you do this, try to recall the changes that Paddy has suggested that will change the gameplay balances.
Hopefully this was useful.

P.S. I hope you will post some pics of the new baby!!!! I hope everything is going well with your wife. It was 15 months ago that my wife gave birth to our second daughter. It's quite an event -- enjoy every moment (even the dirty looks)
