I would think the Greeks would be militaristic since they took over most of the known world. I think they were militaristic in part 1 and 2, why change in Civ3?

I think "Scientific and Commercial" makes sense, the period of miltitary dominance under Phillip/Alex the Great was indeed very important, but the Greek achieved much more more than that - they were for sure traders (commercial), think about their colonization of the mediterranean, and much their scientific discoveries are still absolute basic knowledge in many fields today.
