Which is the beast?

I have never played civ, but I am wondering, Which version of the game is the bestest?!

Though it depends a lot on what you like and/or how much money you want to spend... of the many, many versions, I'd recommend Civ3 Conquests above all other versions.
It has the greatest number of options to explore, interesting custom scenarios, the best multiplayer version (which is not saying much), and overall the most balanced Civs. A cynic would note that many of these advantages are purely the culmination of fixes to aspects of flawed earlier versions, but I won't

For me it's a clear choice:

Better the A.I. is, better the game is. So Civilization3 Conquest with the 1.15 Beta Patch is a winner, only for this reason I clearly recommend C3C to you.(and there is many other reason)

C3C. Even despite the cynics' comments that it is the culmination of fixes, it is still better than any other version...actually because of those fixes. C3C is the most balanced, most stable (afaik), and with the most options for stock gameplay or scenario.
