I caught up a good bit, and have only 3 techs to go before the industrial era. But still, I figure he'll RR like crazy, and then come after me with Cavs. Not sure how to defend...

I was really busy yesterday, and will be again today; no time to play. I am coming up with something though...

Anticipate the obvious 'targets' as cities on the way to your 'capitol'. Place forts at least on all hills/mountain, rivers enroute. Road link from behind and back. Place 'two hops' each with any siege units as stacks that can be brought to bear via road links.
That's a general plan, in particular you need to create at least one killing trap. This being a city on a hill on the route mentioned above if available. Here stack 10 hops with a stack of arty's of whatever kind is available. Use faster moving units to hit and run 'to there' and draw his main army down upon this city. Maybe lucky and his 'emotions' will get the better of him and he'll waste the bulk of his forces on this target. If shy about the bait or once burned thereby, use this city a raider's camp until he has to hit it.
This could be done likewise from a well-placed barricade.
Oh, and I hope you have a new 'Field Marshall' now!

I haven't seen an up to date picture, but if possible I'd try to set up a killing zone using barricades to a) funnel the cavs to where you want them and/or b) stop them cold. Staffing some with LB/bomb/hops could easily prove to be worthwhile, as long as it isn't anyplace easily bypassable.

Setting up a full barricade system will take up far too many worker turns, although a few well placed among the mountain chain to the NW might prove beneficial.
OTOH, The best defense is to set up a hoplite wall backed with defensive bombard units on the most formidable terrain and build a few barricades to restrict access to your flatter terrain. Still, I'm skeptical of using barricades at this point unless Theseus has a lot of Hoplites and workers.
Typically I use barricade systems when I am heavily outnumbered, and reinforcement is difficult. Setting up a barricade system in the core is probably counterproductive. IMO, a better use of resources would be to build bombardment and horse units for counterattacks
It will be interesting to see which approach Theseus chooses.
