Just curious what strategy anyone else takes when they just want to be the only civilization left. Do you do nothing but concentrate on building military from the beginning? Or combine both science and military, until they have been built up and just take a brigade to wipe them out?

For early conquest, it is good to rush to an early tech that gives you and advantage, and punishing the AI with it. For example, polytheism + barracks mean veteran elephants while the AI defends with only phalanx and such.
Another popular ploy is to race to steam engine, building the Lighthouse and maybe Magellan's on the way. You are then armed with veteran ironclads while the AI defends with pikemen.
Many players prefer to wait until the modern era and build swarms of howitzers and engineers.
At base, all options have the same approach, only on different time scales. You build a tech lead, and focus on building a large force of the strongest unit that tech edge gives you.

The speed of your progress will be determined by the kind of world that you're playing. On a small map it's possible wipe out some civs quickly with units from huts. If you want this kind of speedy bloodlust game you should consider choosing the option which prevents civs from restarting.
On medium and larger worlds the tactics are different, especially if large areas of ocean are involved. This calls for more careful planning and the co-ordination of naval and land forces. This demands a degree of scientific development.
Have a look at the Sailing Succession Game on the Civ 2 General Forum. This is a giga map of around 30,000 squares. Playing with these parameters requires a fairly reasonable infrastructure to make any progress.
