Switch apps while running

Sorry if this is an obvious question, but is there a way to switch out of Civ and get back to OS X without quitting? thanx

Easy, just press Command+P to Pause Civ III and minimise it to a window.

... command-H does the minimizing... no need to pause... at least, I've never had one, but then I like the CivIII music...
