I was wondering how the heck these goodie huts are working? I get different results if I attack the huts from different angles but always the same if I attack from one angle. Hmmmm, does anybody have any idea!

Well, yes. When I move onto another tile before and then attack I may go to a hill, plains, etc. The two instances that I remember I attacked from a mountain tile and got barbarians, I reloaded moved to an adjacent tile with forrest and then attacked and got a warrior instead!? Ethelred is right, it all depends on whether you have turned "preserve random seed" in the game setup screens on or off. If it's off, you'll get a different result when reloading the game. By default this option is on in order to prevent cheating.
Every move you make gives new situation, too. Therefore you get different results from the goody huts if you walk around them and attack from a different side.
The same goes of course for combat results.

It may not be fair but that I know I will make use of this feature, especially on higher levels, since the AI cheats on those. You may also get a different result just by standing still for a turn.
Note that random means you may sometimes get the same outcome even if you wait or move before trying again after a reload.
Reloading is a good technique for learning how the game works, but it's rather tedious and not very satisfying after you get a little experience under your belt.

If you haven't turned off the seed number option in the start of a game, then that number will be used everytime you reload, until something else causes that number to be used. This can happen several turns later if no random numbers have been needed since the reload.
