People always talk about letting the computer build your wonders, then simply capturing them later in the game. So do i have to memorize every city a wonder is built in, or is there another way to do this.

Press F7, that gives you a list of wonders being built / under construction and their location.
BTW, post #6 in the CivIII FAQ has answered that already...
