Help with spies

aight, i set up an embassy in china, then got a spy in china. I did this by right clicking on my capital city and doing everything needed. BUT now, i dont understand how 2 set up missions in the places, i want 2 know how i can do espionage missions and where exactly do i click to do so. Thank you very much for your help.
